Ingredients

• 250g (8oz) butter
• grated rind of 1 lemon
• 1 cup icing sugar, sifted
• 2 cups plain flour, sifted

Directions

1. Beat the butter and lemon rind until creamy.
2. Add the icing sugar and beat well.
3. With a metal spoon, stir in the sifted flour.
4. Take level teaspoons of the mixture and roll lightly into balls.
5. Place on ungreased baking trays and press down well with a fork which has been dipped in cold water to prevent sticking.
6. Bake in a moderate oven (180ºC/350ºF) for 10-12 minutes or until slightly coloured.
7. Cool and store in an airtight tin.
