Ingredients

• 4 cups steamed white rice (preferably day-old)
• 1 onion, chopped
• 1 carrot, chopped
• Handful of mushrooms, chopped
• Handful of Chinese sausage, chopped
• Half a red capsicum, chopped
• 2 eggs, beaten
• 1/2 teaspoon Chinese five spice
• 1 tbsp chicken stock
• 2 tsp sesame oil
• 1 tbsp soy sauce

Directions

1. Uniformly chop your protiens and vegetables into pea-sized cubes.
2. Pour eggs into hot frypan and scramble.
3. Add the onions and carrots to the frypan and cook for one minute. Add the rest of the vegetables and continue to cook.
4. Once the vegetables have cooked through, add the steamed rice into the frypan and mix thoroughly.
5. Add sesame oil, soy sauce, chicken stock and Chinese five spice.
