Ingredients

• 125g butter, room temperature
• 1/2 cup (100g) caster sugar
• 1/2 cup (80g) packed brown sugar
• 1 egg
• 1 tsp vanilla extract
• 1 1/2 cups (185g) self-raising flour
• 1/2 cup (60g) cocoa
• 3/4 cup (130g) chocolate chips

Directions

1. Preheat oven to 160°C/Gas 3 and line two baking trays with greaseproof paper.
2. In an electric mixer, cream together butter and sugars until light and fluffy. Add egg and vanilla and whisk until combined.
3. Stir in flour and cocoa then fold through chocolate chips.
4. Measure level tablespoons, rolling into balls and placing on prepared trays approximately 3cm apart. Press down slightly on each ball.
5. Bake for 15 minutes or until golden brown. When cooked, remove from the oven and transfer to a wire rack to cool.
6. Store in an airtight container for up to 1 week.
