Our family recipe

As usual, the ingredients and directions below are more of a rough guide than a rigid plan. Use your judgement and, as my wife would say, "cook with your heart" (especially when it comes to garlic, then you always add "two hearts" worth).

And by the way, remember to tap each ingredient and direction to cross it off the list!

Ingredients

180g cooking chocolate, finely chopped (we prefer 70% cocoa solids, but those looking for a sweeter treat might prefer 35%-40%)
600ml thickened cream

Directions

In a microwave-safe bowl, heat ½ cup of the thickened cream for about 60 seconds (depending on microwave strength).
Make a ganache by adding the cooking chocolate to the cream and stirring until the chocolate has melted. This will take 1-2 minutes. Set aside to cool.
Pour 1 cup of thickened cream into a medium bowl. Using a hand-held or stand mixer, beat until soft peaks form. Continue whipping the cream until stiff peaks form.
Slowly fold-in half the whipped cream into the ganache with a large spatula. Gently fold in the rest of the whipped cream.
Divide the mixture between 4 ramekins or cocktail glasses.
Refrigerate for at least one hour, up to overnight, before serving.
(Optional) Whip the remaining thickened cream in a separate bowl and refrigerate it to use as a topping for the mousse.
